Update PlantUML version

Jolie Roiseux requested to merge bugfix/plantuml-version into develop

Use the latest version of the think/plantuml container to export the documentation. Some features of PlantUML were not working with the older version. This will keep it up to date in the future as well.

This works on my local, but will have to make sure it works on develop once merged.
